Banana and raspberry muffins

I made these muffins a few days ago and they were seriously yummy. Me and Leyla sat on the kitchen floor and pretty much ate half of them while they were still warm from the oven. I had to keep some aside for Paul and Naomie or they would've all gone before they even had chance to cool down!!

300g self raising flour
1tsp bicarbonate of soda
75g brown sugar
50g porridge oats
2 x very ripe bananas
285ml yoghurt (or milk with a dash of lemon juice/buttermilk)
5tbsps coconut oil, melted
2 x egg whites
150g raspberries (I used frozen)

In a large bowl, mix together the flour, bicarbonate of soda, sugar and oats. In another bowl mash the bananas then add the yoghurt, oil and egg whites. Pour the wet bowl into the dry bowl and mix sparingly. You want to make sure you don't over mix so stir just enough to combine the ingredients. Then add the raspberries. Again, stir just enough until they are combined. Line a 12 hole muffin tray with paper cases and fill with the mixture. The cases will be pretty full, I even had some leftover. Bake on 180C/GM4/350F for 25mins until golden and well risen. Leave to cool slightly in the tray then transfer to a wire rack to finish cooling (if you can resist them for that long!) You will find that they are quite greasy as they first come out but as they cool down the coconut oil will solidify.
