Meal Plan Week 3
Friday - Fishfingers, mash and vegetables
Saturday - Fajita wings, rice and vegetables (I heat up some oil in a frying pan then add half a packet of fajita spice. I brown the chicken wings off in the fajita oil then transfer them to a baking tray. Bake at 200C/GM6 for about 30mins or until cooked through. These are so tasty!)
Sunday - We usually go out to my MIL's house on Sunday so a lot of the time we have a roast dinner there.
Monday - Tuna fishcakes, mash and beans (Mix together mashed potato and some chopped onion with a drained tin of tuna. Dip in flour, then egg then breadcrumbs and either shallow fry or bake until crispy)
Tuesday - Healthy Chicken Enchiladas
Wednesday - Lentil curry and rice (Put 100g lentils into a pan with cold water, bring to the boil then rapidly boil for 10mins, removing any foam that comes to the top. Reduce heat and simmer for 30mins until lentils are soft. Meanwhile, mix together 1tsp minced ginger, 1tsp minced garlic, 1/2tsp cumin, 1/2tsp coriander powder, 1/4tsp turmeric, 1/4tsp cayenne pepper, 1/2tsp garam masala and 1/2tbsp paprika in a bowl. Heat some oil in a frying pan then add some onion, fry until golden then add the spice mix, cook off for 1min. Add 1tsp tomato puree and cook off for 1min. Add 5 x tomatoes chopped up in food processor and lentils. Bring to a gentle simmer. Add 5tbsps natural yoghurt and heat through. Serve with rice and naan bread)
Thursday - We have started going to Paul's nan's house on a Thursday and she tends to make something for us.
