Mediterr-Indian Sausage and Chickpea Stew

I added so many different flavours to this stew, I wasn't sure exactly what to call it. Half Mediterranean and half Indian. It was very yummy anyways and that's the main thing :)

Mediterr-Indian Sausage and Chickpea Stew

4 x sausages (I used gluten free), cut into bitesize pieces
1 x large onion, diced
2 x garlic cloves, crushed
1 x small yellow pepper, deseeded and diced
1tbsp tomato puree
2tsps garam masala
200g tin chopped tomatoes
100g chickpeas, cooked and drained
zest and juice of half a lemon
handful fresh coriander, chopped
rice to serve

Heat some olive oil in a large pan, add the sausages and fry until golden. Add the onion, garlic, yellow pepper and garam masala to the pan. Cook for 5mins until veg has softened. Add the tomato puree, leave to cook off for 30 seconds then add the tinned tomatoes and chickpeas with a splash of water. Mix all together, bring to the boil, reduce heat and simmer for 15mins until the tomatoes have thickened and become more sauce-like and the chickpeas have heated through. Mix in the lemon zest and juice. Serve over a mound of rice with the coriander sprinkled on top.
